Our Wholesome Gingerbread

These cookies are fun and easy to prepare - a Christmas tradition in our house, and they make a great gift too. Enjoy!

Our WHOLESOME Gingerbread

Ingredients

  • 1 ½ cups spelt flour

  • 2 tsp ground ginger

  • ½ tsp ground cinnamon

  • ½ tsp mixed spice

  • ¼ tsp baking soda

  • Pinch of sea salt

  • 50g butter, melted (¼ cup)

  • 30ml milk of your choice

  • ¼ cup pure maple syrup

  • 2 Tbsp molasses

Directions

Preheat your oven to 150°C fan forced.

In a mixing bowl, combine the flour, spices, baking soda and salt.

In a seperate bowl, mix the melted butter, milk, molasses and maple syrup until well combined.

Add the wet to the dry ingredients and mix together until a dough forms. If the mixture seems a little wet, add a little more flour, or dry add more milk (it should be like playdough and not stick to your fingers).

Roll into a ball, cover and refrigerate for 30-60 minutes.

Place the dough between two pieces of baking paper and roll 2-3 millimetres thick.

Cut shapes with a cookie cutter, place on a lined baking tray and bake for 10 minutes or until golden.

Leave on the tray until completely cooled. They firm as they cool. Then decorate as you wish!
