Pear & Prune Chia Pots

“P” fruits are high in a type of carbohydrate/polyol known as sorbitol. Sorbitol behaves similar to chia seed in the gut - they both have an osmotic effect, dragging water through the bowel, and softening the stool, thus preventing constipation. Chia seeds and coconut oil are also rich in essential fatty acids which aid digestion and alleviate constipation.

Ingredients

  • 2 pears, peeled & diced

  • 10 prunes, roughly chopped

  • 3/4 cup chia seeds

  • 2 cups water or coconut milk

  • 2 tsp coconut oil

  • good pinch cinnamon

Directions

  1. In a bowl combine the chia seeds and water/coconut milk, and set aside to soak.

  2. In a small saucepan add the pears and prunes, along with a splash of water, and place over a low heat. Slowly simmer until the fruit is stewed and soft.

  3. To serve:

Either: Add the pears. prunes, chia seeds, coconut oil & cinnamon to a blender and pulse until combined.

OR, add the cinnamon and coconut oil to the pear & prunes, stir to combine, and then fold through the chia seeds.

  4. Serve a portion, then refrigerate the remaining mixture for up to 3 days.
