Our Baked Meatballs: A Simple. Subscription Recipe
Currently the most requested dinner in our house! These baked meatballs are so simple, and absolutely devine.
An example of an easy weeknight meal - that takes no time at all, is packed with vegetables and protein - and that everyone in the family will enjoy.

Ingredients
1 onion, finely diced
2 cloves garlic, crushed
1 butternut, small, cubed
1 bunch silverbeet, roughly chopped
1/4 cup water
500g meatballs (homemade or we use The Organic Farm Butcher)
Sea salt & pepper
1 teaspoon paprika
1 cup grated cheddar
Pasta of choice or zucchini noodles, to serve
Directions
Place a skillet over medium heat and drizzle with olive oil.
Add the onion and garlic and cook for 2-3 minutes. Add the water, butternut and silverbeet - cover and cook for 15 minutes over a low heat until butternut is tender. Add the pasta sauce, season well with sea salt & pepper, and stir to combine.
Meanwhile, season your meatballs generously with sea salt and cracked black pepper, and place them on a baking tray. Pop into the oven at 200C until browned and cooked through.
Add the cooked meatballs to a baking dish and pour over the tomato sauce. Sprinkle over grated cheese and place under the grill until melted & golden.
Serve over pasta of choice or zucchini noodles, season, and garnish with fresh basil.
