One Pot Spicy Green Curry

This One-Pot Spicy Green Curry is packed with bold flavors and nourishing ingredients—all in a simple, one pan meal. it’s perfect for busy weeknights, rich in protein, loaded with fiber, and has just the right amount of heat.
Our ONE POT SPIICY GREEN CURRY
Ingredients
1 tbsp Extra Virgin Olive Oil
500 grams Tofu (firm, diced) or Skinless Chicken Breast/Thigh
2 Zucchini (medium, chopped)
1 head Cauliflower (chopped)
1 3/4 cups Canned Coconut Milk (full fat)
3 tbsps Lime Juice
1/4 cup Green Curry Paste (we love Ceres Organics)
2 tbsps Coconut Sugar
1/2 tsp Sea Salt
2 Jalapeno Pepper (thinly sliced)
1/2 cup Coriander (chopped)
Directions
Heat the oil in a large pot or deep pan over medium heat. Add the tofu/chicken and cook for three to five minutes until it starts to brown and get crispy, then flip and brown the other side. Add the zucchini & cauliflower, and continue to cook for three to four minutes until slightly softened.
Add the coconut milk, lime juice, curry paste, coconut sugar, and salt. Stir and simmer for two to three minutes. Add the jalapeño and continue to cook, stirring frequently for another three minutes or until the zucchini is fork tender.
Divide between bowls and top with coriander. Enjoy!
Delicious served on brown rice or cauliflower rice.
