Our Healthy Christmas Cake
A dense and moist fruit cake that’s naturally gluten free, and the high ratio of fruit means There’s no need FOR any ADDED sugar in the recipe.

Ingredients
600 grams Sultanas Or Raisins (Any mixed dried fruit)
1 tsp Ground Cinnamon
1 tsp Ground Allspice
1 tsp Vanilla Extract (vanilla bean extract or paste)
1/4 tsp Nutmeg
1 Navel Orange (zest & juice)
3 tbsps Extra Virgin Olive Oil
3 Egg
2 cups Almond Flour (or ground almonds)
50 grams Walnuts (chopped)
Directions
Preheat your oven to 160°C fan forced and prepare a 20 cm round cake tin with baking paper - lining the sides and the base.
Combine dried fruit, spices, vanilla, orange zest + juice, olive oil and eggs.
Add in the almonds and walnuts, and mix through to combine. Spoon the batter into your baking tin
Bake for 90 minutes then check with a skewer to see if it comes out clean, if not, bake for a further 30 minutes. Cover the top if necessary to prevent over-browning.
Allow to cool, then remove from the tin and store in an airtight container in the fridge for up to 1 month.
